Learn to embrace seasonal produce and prevent waste by celebrating whats in season this Springtime and eating “Root to frond.” Similar to ‘most to tail,’ cooking where we utilise all parts, we can find new uses for parts that we may have otherwise tossed into the compost. Ingredients such as Carrots, fennel and tangerines (and more!) get a surprising revamp with this way of cooking—utilising all the parts for surprising and delicious flavour combinations. Join me for a delicious meal and a talk on how to prepare foods with this ethos in mind.

The Talk: a 45-minute talk by Camilla Ahlqvist, CNP & Holistic Chef, founder of The Practice, sharing a depth of knowledge on how to prepare various ingredients to maximise their role in your dishes and to help you cook more sustainably.
